Roasted Spaghetti Squash is a healthy substitute for pasta, but may also be used in other recipes such as Spaghetti Squash Fritters or Spaghetti Squash Tots.  The flesh cooks into long, tender strands like spaghetti, with a sweet and earthy-taste.  The first step in prepping is to scrub the squash with Purely Essential Fruit and Vegetable Wash.

INGREDIENTS

1 Lg Spaghetti Squash (approx 5 lbs) washed with Purely Essential Produce Wash

4 TBSP Olive Oil

Kosher Salt

Fresh Ground Black Pepper

 

DIRECTIONS

Cut the squash in half lengthwise and scrape out fiber and seeds.  Brush the flesh with 2 TBSP of oil and generously salt and pepper.  Cut side up, place the squash halves on a baking sheet and roast at 400 degrees F until tender when pierced with fork.  (Approx 50-60 minutes).  Remove the squash from the oven and let sit at room temperature until cool enough to handle.  Scrape the flesh with a fork to make long strands.  Use the roasted long strands of Spaghetti Squash in your favorite recipe.
