Pumpkin Oatmeal Muffins – Purely Essential

Mornings can be hectic. So hectic, you might catch yourself skipping breakfast. These energy-packed muffins are a healthy, quick, grab-n-go, and accompany your coffee superbly.
2 cups old fashioned oats
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
3/4 tsp ground ginger
1/2 tsp ground nutmeg
1/2 tsp allspice
1/4 tsp ground cloves
1 cup milk
3/4 cup canned pumpkin (not pie mix)
1 egg
1/4 cup honey

Preheat oven to 350 degrees. Grease a muffin tin or use baking cups. Place all ingredients in bowl and mix well. Fill each muffin cup to the top and bake for 20-25 minutes, or until the tops are set. Do not overbake. Allow to cool before serving.

Optional stir ins: chocolate chips, carob chips, raisins, walnuts, or pumpkin seeds.
